Kevin is a Detroit Author, former Combustion Engineer, Small Business Owner (Castalia et Sfumato – Perfume/Cocktail Bar), and friend of Dolcetto. His recent book, Cocktail Theory, delves into the science of cocktails through his passion for science and perfect cocktails. We are honored to have him for 1 night only to enlighten our spirits.
Engineering the Perfect Cocktail ($75)
Calling all engineers! Let’s dive into the details of how your senses perceive cocktails!
Taste buds measure compounds within a cocktail, and depending on the ratio of bitter/sour/salty/sweet/savory, you perceive the drink as either delightful or deplorable.
In this class, we will dive deep into how the sense of taste behaves and how taste governs whether we find a cocktail balanced. We’ll make graphs and tables, look at PowerPoints, and use gram scales to make this all happen.
We’ll then taste several types of amaro and fortified wine to experience how taste behaves in a real setting.
Non-engineers are welcome; however, this will be a decidedly nerdy approach to cocktailing geared towards both folks with a technical background and bartenders looking to increase their understanding of the science behind the cocktail. There will be many things to taste.
